Celebrating our local roots and the people who make Urban Egg special.
Three coffee beans atop an Espresso Martini represent health, wealth, and happiness, a small wish for the guest taking that first sip. A premium steak knife arrives before the Steak & Eggs. A handwritten hope joins a heart-shaped Wishing Wall.
At Urban Egg, thoughtful details help make an everyday meal feel special. As we celebrate our 14th anniversary, that care connects our first restaurant to every table we welcome today.
Where our story began
In 2012, founders Randy and Liz Price saw an opportunity to bring something fresh to breakfast in Colorado Springs: creative food, quality ingredients, and warm hospitality that could brighten the day ahead.
They opened Over Easy, A Daytime Eatery, in downtown Colorado Springs. Some of our earliest guests still remember that name. As the concept grew beyond the Springs, Urban Egg emerged, and in 2018, the original restaurants joined the others under one name. The food and familiar faces guests loved carried forward.
A little imagination, a lot of care
Breakfast can be a comforting routine or the highlight of a weekend. Our scratch kitchen brings creativity to both, with strawberry cheesecake pancakes, savory favorites, and pancake flights that make choosing just one flavor unnecessary.
Local partners help give each restaurant a connection to home. That includes Barista Espresso in Colorado, The Roasterie Coffee in Kansas City, and Eiland Coffee Roasters and Texas Coffee Traders in Texas, alongside the producers and suppliers whose craft helps shape our menu.
The same care extends beyond the kitchen. A special toothpick identifies a gluten-free entrée and the consideration behind its preparation. Bizzy Bags give our youngest brunchers screen-free activities to explore. Comfortable seating invites guests to settle in, while Wishing Walls collect the hopes and good vibes of the neighborhood.
Each detail starts with a simple thought: How can we make your day better?
The people behind every bright morning
Our team brings that thought to life.
Someone prepares ingredients before the doors open. Someone helps a guest navigate a dietary accommodation. Someone notices a coffee needs refilling or makes a family feel welcome.
That commitment has been part of our story from the beginning. In Randy’s words, “We treat our team members as family and our guests as friends.”
To the dedicated teams who built our earliest mornings and those welcoming guests in our newest restaurants: this anniversary belongs to you.
More communities, more tables to share
Our Colorado beginnings have grown into restaurants across Colorado, Kansas, Missouri, and Texas. Opening in Overland Park in 2022 also brought Randy back to his Kansas City roots. Fort Worth welcomed our first Texas restaurant in 2025, and more neighborhoods are joining the story.
With each opening comes an opportunity to give back. From longstanding support of Fostering Hope in Colorado Springs to partnerships with Food For Thought in Denver and Harvesters in Kansas City, our communities help give our work meaning beyond the meal.
Fourteen years began with one restaurant and grew through people: guests who return, partners who share their craft, and team members who bring care to each day.
Thank you for making Urban Egg part of your mornings and your memories. Pull up a chair. There’s another bright morning waiting.
